How should you prepare this yummy fresh broccoli?! [CN]

If you're like me, you're used to popping some broccoli into a boiling pot of water until it's cooked.[CN]

Unfortunately, that method removes a lot of the essential nutrients that make broccoli worth eating in the first place, including loads of B vitamins and vitamin C.[CN]

Even the potentially cancer-fighting proteins called glucosinolates break down when they're overcooked by being boiled.[CN]

To figure out a better, simpler way, we chatted with Dan Souza, the executive editor of Cook's Science at America's Test Kitchen and one of the authors of "The Science of Good Cooking."[CN]

His solution? Put your broccoli in the microwave. That doesn't mean just plopping it on a plate and throwing it in there, though.[CN]

Here's what you're going to do:[CN]

  1. Fill a large glass bowl with broccoli.[CN]

  2. Add a tablespoon or so of water to the bowl.[CN]

  3. Cover the bowl with a plate.[CN]

  4. Microwave your setup on high for a few minutes. [CN]

  5. Enjoy![CN]

"You're essentially steaming it inside there," Souza told Business Insider. "There's really no place for nutrients to go. it stays in the vegetable."[CN]

Steaming is a great alternative to boiling broccoli. A November 2015 study evaluated different cooking methods for vegetables including broccoli, and came to the conclusion that steaming is the best way to preserve and enhance the nutrition in fresh broccoli.[CN]

Souza said his microwave method is even better than steaming the veggies over boiling water, when it's still possible for some of the nutrients to leach into the water.

Plus, there's the ease of just popping it in the microwave as opposed to taking the time to wait for water to heat up on the stove.

This is TOTALLY untrue! Using a microwave to cook your food is the equivalent of killing it's nutritional value, if it has any...it distorts the molecular structure, even of water when used to heat/boil it-- do your own research. Simply boil the water on your stovetop THEN add the broccoli...cover it with a top (that fits the pot) and let it simmer on an unused burner. In 10-20 mins (depending on the amount), the broccoli will be ready, still green...cooked perfectly.[CN]

LIFETIME COOKWARE! Made since 1912 in America and broccoli was something I loved because my mom cooked in nothing but that...no extra nothing. ALL nutrients kept in that equaled raw but your body can utilize the food better. Cook with low heat, no steam, no water, no microwave (seriously--the PLATE keeps in the nutrients???? that's the most stupid thing I've ever read. take 2 plants that are the same, put the same amount of water and sunlight but boil water in the microwave first to put in one plant and you'll watch it die. SAME water ???? the microwave kills what's in water Why would you ever cook in it![CN]

This may work for those who have a microwave. I will not use a microwave for it lso removes the nutrients of the food being cooked. I do not cook anything in those steamed vegetable bags as I do not know how much of the chemicals fromthe bags is leached into the food as it steams, I put mine in a glass bowl in my pressure cooker, put glass lid on bowl and let rocker rock for 3 minutes, set aside to cool down naturally. Works great and do not have to be concerned about the microwave killing any nutrients. I have two stove top pressure . They are very versatile and you can cook vegetables without robbing the nutrients. I do the same with stews and pot roasts, and other meat dishes.[CN]

I have a steamer. I totally agree that microwaves are a wasted product in my book. I never use the microwave and would not even own one except my husband uses it sometimes.[CN]

Glorym and ritz, you still run into similar dilemmas, not everyone has a steamer, slow cooker or microwave, which leaves the old standby, boiling.[CN]

I like to put them in a stir fry wok with other vegetables and a little olive oil.[CN]

Yup! I think stir frying is actually the way that keeps the vitamins most intact in the vegetables since they are cooked in a shorter time. [CN]

So does this mean if I cook the raw broccoli in the sauce like oyster sauce or soy sauce with water till it withers, the nutrients are not removed but mixed with cooked sauce which eventually you will consume also ???[CN]

When is US going to wake up with these pesticides? It is Monsanto corp that pays off the politicians. Vote for non GMO foods. Contact your legislator. Obama says he is a green supporter, yet he allows big money Monsanto to poison our food and water. I live in KS and we have water warnings because of pesticide in water.[CN]

My mom who lived to be 82, steamed her veggies then saved some of the liquid and when cooled off enough to drink would enjoy a glass or two so she got not only the benefit of the broccoli but the nutrients that leached into the water. Of course, use only organic broccoli. I do this also with other veggies that I steam.[CN]

When you see people do so, you can see the water turn color as all the benefits are leeched out.[CN]

I remember going to visit my uncle at his farm. His wife would take the water that she cooked the vegetables in, usually a glassful, and set it on the stove. And their kids all took turns drinking that water, each on a different day. They didn't like it, but it was required and they got used to it. Uncle was 6'1", aunt was 5'4". Girl cousin grew to 5'10", and one boy was 6'4" and the other was 6'6".

Dunno if it was the water or not.

This is the correct way to cook broccoli by microwave. We never did it any differently. We get a good sized bowl add some water and cook broccoli and cauliflower all at the same time until tender. We sometimes add a little Butter Buds on it too.

Pretty much the way I do it. For many years I've had an oblong steamer cooking bowl from Tupperware (you can still find them at thrift stores and yard sales/they are usually a mustard color) they come in 3 pieces; a bottom. Then a white steamer with holes liner and the a lid. I cook all kind s of fresh veggies in it, but it's especially good for Broccoli, Asparagus, green beans and carrots or long-shaped veggies. Use a one-fourth cup of water in bottom part lay cleaned veggies in liner and top with lid...put in the Microwave about 3 mins or to your liking season and enjoy. They will taste perfect, if you do this every time and the water stays away from the veggies with this method.

If it is Tupperware, I assume it is plastic? I would be cautious about microwaving in plastic, especially older plastic.

WorldWideReply toChris

plastic is nasty stuff and I'm trying to rid my kitchen of it all. I buy things in glass when I can. Milk and water are hard to buy without it being in the stuff. I have been using the almond milk for my personal use on cereal and coffee.

BarbaraReply toChris

If the broccoli is placed in a strainer insert, nutrients are dripping through the holes as the broccoli steams.

[ 0 ] [ 0 ]
ChrisReply toChris

For 3 mins Barbara, and very little water, not much is lost.

That could be true Alex, but I'm 74 and in great health, just had a complete physical and bones are like rocks, no high blood pressure and I lift weights and walk' my parents lived into their 90's, I could ask Tupperware, maybe I'll get a new dish :)

Not sure where you live Worldwide, but supermarkets in the Midwest sell milk and creams in glass bottles and you return them for a deposit. Almond Milk is good, but I grew up on a farm and everything we ate was natural and fresh from the cow and the garden and I buy most off my food now at the local Farmers-Markets.

And we are just now discovering that steaming veggies in the microwave is the best way to cook them and preserve the nutrients? I found this to be true years ago...I wonder why I am just now seeing this in print!

Tony DReply toA

Microwaving increases the internal temp of the food to a level where nutrients are destroyed.

Do mother learn the rule of how to make your kids hate Broccoli by plopping it in boiling water and make it smell like something died? Barely steamed I like the stuff, overcooked and it's something you feed to yard animals.
